“Everything is extremely fresh — we get deliveries three times a week — which is why we’ve been so successful,” general manager Poly Sim said.
“The general idea is figuring out how to run a restaurant based on statistics,” said Peter Newlin, who runs the chicken sandwich shop’s parent company and affiliated technology firm.
Somebody People gets its name from a David Bowie song. “We want it to be a restaurant first and foremost, that just happens to not use any meat or dairy or seafood.”
“Wine can be complicated and intimidating, so we’re trying to take that part out,” a co-owner said. “Instead of a patio, we call it a front porch, and inside, it’s a living room.”
The owners of Avanti’s Bistro Georgette are taking over the French restaurant.
Two of the inaugural tenants at the food hall that opened in February are gone. But both are maintaining a presence in Denver.
The restaurant is being opened by Brian Midtbo, who also co-owns Wash Park’s Blackbird Public House.
Like Tom’s Diner, the business at Colfax and Speer used to be part of the White Spot chain.
Pasty Republic already operates a food truck and on Tennyson Street. “It’s an opportunity to market more to office workers,” owner Matt Cherry said.
