“This was our dream and it was [so] short lived,” Derive Bistro’s owners said on Facebook.
“They were served an eviction notice, they appealed it, and the judge ruled against them, and that’s where we are,” a city official said.
The company says it is coming to nine cities in the metro area. It already operates in Lakewood.
“It’s 11 weeks in the food truck, where they’ll get a salary, and after 11 weeks we’ll help find them employment in the community,” said Michael Gropper, a veteran himself.
“With the patio right on the water — there’s not another like it on the Front Range,” said Mario Vega, who is teaming up with Le Peep CEO Kevin Wessel.
“It’s cool having a sit-down restaurant for the first time,” Benny Blancos owner Mike Martinez said of his deal with The Monkey Barrel.
The space most recently was home to a Nova Scotia-inspired eatery.
It’s expected to open next year, along with a location along West Colfax.
The New York-based burger chain has operated in RiNo since March 2018 and Highlands Ranch since July 2018.
The 1,000-square-foot space was formerly home to Fat Jack’s Supersubs, which closed last October.
