Two of the inaugural tenants at the food hall that opened in February are gone. But both are maintaining a presence in Denver.
The restaurant is being opened by Brian Midtbo, who also co-owns Wash Park’s Blackbird Public House.
“You could walk an elephant on top of those floors and you wouldn’t hear it,” said Vince Fucarino, who helped design the home for his brother and sister-in-law.
The Boulder-based home of Budweiser-branded “pajameralls” and denim swimsuits has licensing agreements with about 30 colleges, as well as the NFL.
Pasty Republic already operates a food truck and on Tennyson Street. “It’s an opportunity to market more to office workers,” owner Matt Cherry said.
“Our lease is up in November, and lease rates are going up about 30 percent in RiNo,” said owner Biju Thomas, who opened in RiNo in 2014 and since has added other locations.
The company that owns the buildings on either side of the Platte Street Plaza is footing the bill.
They will be the California-based company’s first locations in Colorado.
It’s been clear that Denver-area locations were in the works, but this is the first specific address to become public.
