A smoothie bowl chain is squeezing out two more Denver-area locations.
Whole Sol plans to add locations in RiNo and Sloan’s Lake by year-end, adding to its two existing spots by Union Station and Boulder.

In RiNo, the restaurant will take up 1,750 square feet on the ground floor of The Hub, a new office building at 3601 Walnut St., Whole Sol co-owners Phil Dumontet and Alexa Squillaro confirmed.
And further west, Whole Sol will open in 1,300 square feet on the ground floor of Lakehouse, a 12-story condo development currently being built on the south shore of Sloan’s Lake.
Dumontet said the couple is looking for one more location in the Denver or Boulder area before looking to expand outside of Colorado.
“Colorado is the perfect market,” he said. “We’ll scale it nationally from there, with either private-equity funding or a franchise model.”

The counter-service restaurant offers smoothie bowls, toasts, cold-pressed juices and a variety of coffees. Squillaro, who has a master’s degree in nutrition, designed the menu to include grab-and-go options that are all organic, vegetarian, gluten-free and dairy-free.
Dumontet and Squillaro, both marathon runners, moved to Denver two years ago after “falling in love with the lifestyle.”
“We were surprised by the lack of healthy and organic food options for such a health-conscious place,” Squillaro said.
The first Whole Sol opened at 1735 Chestnut Place in Denver in July 2018. The location at 1420 Pearl St. in Boulder followed in April.

“People have been saying that they’ve been waiting for an option like this,” Squillaro said. “We’ve been really encouraged by the performance of the stores and the feedback from the community.”
Brian Levitt, president of Lakehouse developer NAVA Real Estate Development, said construction will be finished by year-end.
Whole Sol is the first retail tenant to be announced for the project; another 4,900 square feet of retail space is still available. Ken Himel and Zander Rodriguez of David Hicks & Lampert Brokerage have the retail listings.
Whole Sol joins Chase Bank and Viv Cycle as retail tenants in The Hub. Broker Kyle Framson of Zall Commercial Real Estate is leasing the space.
