Another pizza chain is entering Denver’s fast casual market.
California-based Pieology plans to open near West 12th Avenue and Broadway in September.
The company, started in 2011 by Carl Chang, brother of tennis player Michael Chang, sells personalized thin-crust pizzas.
This is the first location for franchisees Ashish Chopra and Dilip Patel, but they plan to open stores in Boulder and Thornton this year. Chopra also is looking at LoDo and RiNo for future locations. The pair owns the franchise rights for downtown Denver and northwestern Colorado, and has ambitions to expand by three to four stores per year until they reach a dozen.
“It depends on how folks in Colorado accept our concept,” Chopra said.
Pieology pizzas will start at $8. Customers can choose their own crust, sauce, cheese, meats and vegetables for an 11.5-inch pie cooked in a wood stone oven.
The location at 1147 Broadway near the art museum comprises 2,150 square feet and will seat 80 people inside.
The tenant’s broker was Sean Kulzer of SullivanHayes. Chopra is working with Sundance Mountain Development for contracting.
He estimates each location will cost between $800,000 and $1 million to open. This first location is self-funded.
“Being an entrepreneur for many years, I always look for concepts that are unique and simple,” he said.
Chopra, 50, lives in Irvine, California, and will commute to Denver to open stores until relocating to the area in the future. His past experience is in hotel development and retail.
There are two other Pieologys in Centennial and Lakewood, both owned by different franchisees.
