The king of late-night cookie delivery is taking a bite out of University Boulevard.
Insomnia Cookies, a chain that delivers through the wee hours of the morning, has a new location upcoming at 2075 S. University Blvd., steps from the University of Denver campus.
The cookie shop has stamped its future storefront with a logo and posted the location on its website. It did not immediately return messages seeking comment.
The chain is betting that college campuses and late-night deliveries go together like milk and cookies – a recipe that has taken Insomnia from its first batch, when its founder was a student at the University of Pennsylvania, to more than 110 shops as far west as Colorado. Many of them, including Boulder’s, are within walking distance of a university.
Founder Seth Berkowitz tested out the concept as a college student in Philadelphia in 2003, baking in his apartment kitchen and delivering the cookies himself. The chain’s menu now boasts cookies, brownies, cakes, ice cream and milk.
Berkowitz has since started a laundry and dry-cleaning delivery service in New York City called FlyCleaners.
The cookie chain has sour relationships with at least one rival delivery service. In March, it sued Richmond, Virginia-based Red Eye Cookie Co. for its similar business plan, name and logo.
The late-night cookie delivery service appears to be a novelty in Denver. A cursory Google search for bakery takeout options turned up not a crumb.
