Fast casual seafood chain expands with outposts in Denver, Littleton

A grilled seafood and fish taco chain has hooked two more Denver-area storefronts.

Rubio’s Coastal Grill plans to open at 1390 S. Colorado Blvd. in Denver and at 111 W. Mineral Ave. in Littleton. When both open, the San Diego-based chain will have six Colorado outposts.

“We’ve been looking at the general South Colorado Boulevard area for two years,” said Greg Semos, Rubio’s vice president of real estate. “This location is a relatively new development and it has great presence on the street. We think it has all the elements that we’re looking for in a restaurant.”

Semos said the company leased the 2,600-square-foot restaurant last home to Protein Bar in fall, and started construction last week. He estimated the storefront will cost $850,000 to get started, with a tentative opening date in late May.

Farther south, a new location in Littleton is under construction and is set to open in April. Semos said the chain restaurant is eyeing two more locations in Colorado.

Semos said Rubio’s worked with broker Katie Hummer of Kin Commercial to lease both locations.

Rubio’s got its start in San Diego in 1983. Its CEO, Marc Simon, is a former executive at Chipotle Mexican Grill. Semos said the chain aims to differentiate itself by focusing on seafood, price and taste.

“Today if you want a freshly cooked seafood plate, where do you go in Denver and what does it cost you?” Semos said. “We serve two Panko-crusted shrimp tacos, beans and chips for less than 10 bucks.”

It opened its first location in Colorado in 1998, Semos said, and has spots in Highlands Ranch, Aurora, Broomfield and Lakewood. All of its restaurants in Colorado are corporate-owned.
