Hyatt Hotels Corp. is preparing for the return of Denver tourists.
In November, the company debuted a Hyatt Centric at 1776 Champa St. The 14-story hotel has 264 rooms. On the ground floor, Chef Paul Reilly and his sister Aileen opened Apple Blossom, a new American concept with dishes like duck gumbo and butter-based tofu steak. The Reillys also own Coperta Italian restaurant and previously owned Beast + Bottle in Cap Hill.
And last week, Hyatt opened Thompson Denver, an upscale boutique hotel, at 1616 Market St..
Thompson Denver features 10 stories with 216 rooms and standard rates starting at $329 a night. On the ground floor, Chez Maggy, a 90-seat French restaurant by Michelin-star Chef Ludo Lefebvre, opened its doors. It features classic French dishes, such as French onion soup, bison tartare, steak frites, cassoulet and bison Bourguignonne.
There’s also a sixth-floor sunroom bar and lounge called Reynard Social with a seasonal cocktail menu, curated wine list, local beer selection and alpine-inspired bites.
Thompson Denver is across the street from Market Station, a development combining apartments and office and retail space.
Hyatt launched the Hyatt Centric brand in 2015 and now has 48 hotels in 44 cities. The company acquired Two Roads Hospitality back in 2018, and as part of that took over brands like Alila and Thompson. Thompson has 15 hotels in 13 cities.
