The tenant list at the under-construction Edgewater Public Market is getting longer.
New brewery Barquentine Brewing Co. has signed a lease to operate in the food hall portion of the project coming to the city west of Sloan’s Lake, and several new smaller tenants also have been named.
The food hall is set to open this fall as part of the larger Edgewater development, though Barquentine owners Ed and Kyle Knudson say the brewery may open a month or two behind its neighbors.
The father-and-son team expect the space to be turned over to them by July, followed by a 16-week buildout of the 4,800-square-foot site, which will be split between its brewing operation and its taproom.
“We’re focusing primarily on tasting room sales,” Ed said. “We’re fashionably late to the Denver beer market, which allowed us to see what models have worked. The breweries that stick out, that are doing well, are focusing on tasting room sales — it’s the cheapest way to get the beer from the keg to the customer.”
The brewery will focus on Belgian-style beers, Ed said. Kyle, currently the head brewer at Joyride Brewing, will be Barquentine’s head brewer, and the pair plan to hire a front-of-house manager and a second brewer.
Barquentine Brewing Co. is named after the “massive European sailing ships” that once brought brewing provisions to port, Kyle said. The pair hope to have the brewery open for business by October.
Also joining the Edgewater food hall is the Japanese restaurant Ajinoya Ramen, which currently operates at 1390 S. Colorado Blvd., as well as The Ethiopian Food Truck and the East Coast-themed food truck Rock N’ Lobster.
David Hicks, and Lampert brokers Ken Himel and Shawn Peel, are leasing the space. They’d previously confirmed these food hall tenants:
- Amethyst Coffee
- Arepas House
- Barbed Wire Reef, a wild game-focused eatery
- Carnivore, the taco-centric spinoff of Barbed Wire Reef
- The Gyros King
- Happy Cones, specializing in New Zealand-style ice cream made with real fruit
- Lucky Bird, a fried chicken concept
- The Mac Shack
- Monna Pizza
- Moontime Crepes
- Slideshow, a sandwich slider restaurant formerly known as Eighty Ate food truck
- Vegan Van
