Kombucha taproom opens in The Highlands; features kombucha floats

Danielle Brooks did not like kombucha when she first tried it, but she learned to love the fizzy drink after it seemingly cured her stomach issues in 2007.

Eight years later, she’s doubling down on the fermented beverage with her husband, Noah, by pairing her love for kombucha with his love for ice cream floats.

“(Noah) came up with the idea of putting frozen yogurt with kombucha and making a float,” Brooks said. “So we started the food truck last summer and it took off. I was selling out left and right, and everyone was excited about the concept of the floats, so I was like, ‘I want a tap room.'”

Now, the food truck runs only at private events. The couple used savings from their previous house-flipping business and funded the creation of American Cultures, a kombucha taproom and frozen yogurt shop at 3233 Tejon St. The 1,200-square-foot location seats 50 people.

Kombucha is a fermented black or green tea. Brooks said an average glass sold by American Cultures contains about 30 calories and three grams of sugar. At American Cultures, a 16-ounce glass of kombucha costs $5 and a float, made with Cloud Top yogurt, is $6. The taproom also serves 64-ounce growlers.

The American Cultures menu also offers chai tea, iced tea, Method Roaster’s cold-brew coffee and Rebel Oats oatmeal.

While kombucha can be made alcoholic, American Cultures is a non-alcoholic taproom. The amount of alcohol in their kombucha is comparable to a serving of sauerkraut.

The company does not make its own fermented tea. Instead, American Cultures serves kombucha from a variety of manufacturers, including Happy Leaf Kombucha, which has a taproom in Edgewater.
