Boulder’s loss is Stapleton’s gain.
Kristy Socarras Bigelow is closing down the Boulder outpost of her Cuba Cuba chain at the end of June and opening up in Stapleton at 8261 Northfield Blvd.
“The lease was running out and we decided to close,” Bigelow said. “It wasn’t something we wanted to take on for another five years.” Bigelow said it was getting harder and harder to manage a spot outside Denver. The Boulder location is at 2525 Arapahoe Ave.
Bigelow said she’s investing $400,000 in the new, 1,550-square-foot space, which was remodeled and decorated by R&M Parker Tech. The Stapleton restaurant opened Wednesday.
“Even though it is fast casual, I want people to come for the experience,” Bigelow said. “I want them to get that vacation feel when they walk through the door.”
Bigelow started Cuba Cuba as a café and bar 15 years ago in the Golden Triangle. A Highlands Ranch location opened three months ago. The other locations are in Glendale and Greenwood Village.
Bigelow grew up in Miami. She said that after moving to Denver, she missed the Cuban culture and decided to open a Cuban eatery.
